Bambara beans squash


2 ½ cup diced butternut squash

1 ½ cup dried Bambara beans.

1 small onion, chopped

1 cloves garlic, minced

1 cup coconut milk(optional)

Bunch of fresh kontomire

2 tomatoes, diced

3 cups of water

3 tablespoon salt







Rinse and sort through the dry Bambara beans, cut the skin off the squash, remove seeds and cut into pieces. Add all of the ingredients to the saucepan, besides the kontonmire.

Cook on high for 4 or more hours. About 20-30 minutes before serving add in the fresh kontomire and give it a stir. If the sauce seems to be a bit too watery when done cooking, you can mix corn-starch or any flour into the crock pot, allow it to simmer a bit longer. This thickens it right up.

Serve with rice, yam or bread.
