Butternut squash, ginger and lemon marmalade

Ingredients

  • 1 medium size butternut squash, peeled and cubed
  • 3 cups sugar
  • 1 orange, juiced
  • 1 lemon, juiced
  • 2 cloves
  • 1 tbsp. grounded ginger
  • 200 ml water

Preparation

Heat a large saucepan over a medium heat.Put the chunks of butternut squash into the saucepan.Add the sugar, orange juice, lemon juice, water, ginger and the cloves. Bring the marmalade to a boil. Then lower the heat and simmer gently, stirring occasionally, until the liquid has evaporated. It will take about forty-five minutes until the squash is totally cooked. Removed the cloves and stir vigorously to break up the squash. Now take the pan off the heat.Transfer the marmalade to a clean glass jar while it is still hot.
