Butternut squash Mpotompoto (irish

stew

1 medium size squash

3 fresh tomatoes

Pepper

Salt

1 medium chopped onion

2 clove minced garlic

1 cup palm oil

Cup water

1 cup yam, cocoyam, sweet potatoes or beans(optional)

Fish or meat (optional)

 

 

 

 

 

Preparation

Peel the seed and cut squash in medium chunks 5 minutes. Add blended tomatoes and fresh pepper to it, season and add water and butternut chunks and let it simmer for 10 minutes.

Yam, cocoyam or sweet potato can be added but cook for 10 minutes before adding butternut squash.
