2 cups mashed butternut squash(after boiling or steaming)
1 medium-sized onion
A pieced of fresh ginger
All-purpose flour/powdered cassava (kokonte)
A pinch of salt and pepper
Add finely chopped onion and about a heaped teaspoon of chopped ginger and blend.
Put the mashed squash in a medium-sized bowl, add the blended onion and ginger to the squash gently mix adding salt and pepper to taste.
Fold in the mixture adding flour to thicken and hold the batter Now heat up a little oil in a non-stick pan.
Drop heaped tablespoons of batter into the non-stick pan, Fry each side for 5 minutes.
Serves with beans stew, Bambara beans or lentil (Aduwa).
